Snickerdoodles

Snickerdoodles Recipe

Heat oven to 400

Mix Together:

1 1/2 cups sugar
1/2 cup (1 stick) butter substitute
1/2 cup shortening
2 large eggs

Mix together and add to sugar mix:

 2 3/4 cups Four mixture of your choice, for example:
  • 1 1/4 cup sorghum flour
  • 1/2 cup tapioca starch/flour
  • 1/2 cup brown rice flour
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
1 teaspoon xanthum gum
1 teaspoon baking soda
1/4 teaspoon salt

Mix together in small bowl:

1/4 cup sugar
2 teaspoons ground cinnamon

Shape dough into 1 inch balls and roll in cinnamon-sugar mixture.  Place 2 in. apart on ungreased cookie sheet.

Bake 8-10 minutes.  Remove from cookie sheet.  Cool on wire rack.  Try and stop shoving cookies in your mouth.

Where do you find all those different kinds of flours? I'm assuming a place like Trader Joe's. This sounds expensive, but yummy.

Nancee, you can find them at Fred Meyer. Do you have that there? Also, probably whole foods. Albertsons even carries some of them it is just more expensive.
